Cover Crops

We treat our vineyards like they are on a healthy diet, which is why we plant cover crops year-round, giving our vines the best food they need to grow. The result, we believe, is a truer expression of terroir. While cover crops all share the ability to capture solar energy, planting a diverse mix of covers in the vineyard, both summer and winter, is crucial. Temperature, daylight hours, and water availability change seasonally and by incorporating a mix of functional groups like legumes, grasses, brassicas, and broad leaves, we ensure optimal light capture, and soil protection and building.

All of these plants have different leaf and root architectures. No one plant can capture all of the light and this mix of tall and thin, short and fat, and bushy plants maximizes the capturing of energy from the sun. Similarly, root structures differ. Some have fine roots only in the top couple of inches, some like spaghetti in the top five to six inches, then some with one big deep taproot. These factors, combine to enhance soil structure and nutrient availability, emulating nature’s approach to a complex living ecosystem.

Our Sauvignon Blanc, Zinfandel, and Cabernet Sauvignon are a true reflection of our commitment to the environment and the highest organic standards. All our wines are sourced from Mendocino County, 100% organically grown, and CCOF certified.

Sauvignon Blanc

Paul Dolan Vineyards Sauvignon Blanc is sourced from the McFadden Vineyard, in Potter Valley, Mendocino County, located at the headwaters of the East Fork of the Russian River. It is a tantalizing Sauvignon Blanc with a mouthwatering crispness that is rounded out by ripe green apple, honeydew and zesty citrus. Full-flavored and beautifully balanced, it is a wine that invites another sip.

Zinfandel

Paul Dolan Vineyards Zinfandel is sourced from La Ribera and Chase Vineyards in Mendocino County. La Ribera, with cooling influences from the Russian River, sees long warm days and cool nights, while the Chase vineyard, in the eastern hills of the Redwood Valley, is a cooler climate vineyard resulting in gradual ripening of the fruit. The combined result is refined, complex wines.

Cabernet Sauvignon

Paul Dolan Vineyards Cabernet Sauvignon is sourced from the estate vineyards, La Ribera and Home Ranch. An elegant wine with a round mouthfeel and firm youthful tannins, complimented by brambly blackberry and dark huckleberry flavors. Subtle notes of nutmeg and cinnamon spice from the oak round the rich fruit in a full palate that carries from start to finish.
